HEMP BANANA NUT BREAD

1/2 cup (125 mL) hemp seed nut

3 tablespoons (45 mL) hemp seed oil

1/4 cup (50 mL) hemp seed flour

1 cup (250 mL) whole wheat flour

1/2 cup (125 mL) unsweetened applesauce

1/3 cup (75 mL) buttermilk (or soy/rice milk)

2 eggs
-
1/4 cup (50 mL) maple syrup

2 teaspoons (10 mL) baking powder

1/4 teaspoon (1 mL) baking soda

1 cup (250 mL) ripe banana
Preheat oven to 300 F
Lightly grease a 9x5-inch loaf pan. Mix together
applesauce, milk, maple syrup and hemp seed oil. Stir in eggs, and hemp seed
nut. Sift together all dry ingredients. In a large mixing bowl, combine wet
and dry mixtures, then add banana. Stir until smooth. Pour into lightly
greased loaf pan and bake for 55 minutes or until toothpick inserted in
centre comes out clean. Allow to cool and cut into slices.
Makes one loaf
