LEFSE
Norwegian Flat Bread

2 c. Mashed potatoes

½ tsp. salt

3 tbsp butter - big measure(Chill above before adding flour)

1 c. Flour - ½ mixed in dough and remainder used for rolling.
Take a piece of dough and roll as for pie crust - rolling as thin as
possible.
Bake on pancake griddle until light brown.
Butter lightly, sprinkle with sugar, roll and enjoy!
