WHITE DILL SAUCE
To be served with poached or sautéed fish

Heat 1-2 tsp. oil, 1 tsp. butter with 1 clove of garlic over low heat.

Add 1-2 tsp flour to make roux

Add ½ cup or more of milk and ½ cup of chicken stock, or chicken soup mix.

Add dry dill and/or parsley to taste

Add salt, pepper and mustard to taste.

Heat thoroughly and mix well.

Add ½ to 1 cup of sour cream or plain yogurt.

Add pinch of paprika or cayenne pepper for taste and color.
Serves approximately 4 people.
